 Luxury French Cruise Line Offers A Global Dining Experience

MARSEILLE -- (September 30, 2014) – For the second year in a row, small luxury French cruise line PONANT has been name “Outstanding Cruise Line” by SAVEUR magazine in its Culinary Travel Awards. This latest accolade which recognizes those who put cuisine and culture at the forefront of the travel experience was announced in the magazine’s October 2014 issue.
 
The award commemorates PONANT’S dedication to providing guests with a global dining experience that complements their destination-rich itineraries to remote and exotic ports in all seven continents aboard the cruise line’s three sister ships Le Boréal, L’Austral, Le Soléal (132-staterooms and suites) and three-masted sailing yacht Le Ponant (32-staterooms). A new ship Le Lyrial (122-staterooms and suites) will launch in Spring 2015.
 
As the world’s only French-flagged cruise line, guests should expect the fine gourmet dining and wines that reflect its heritage. Ponant’s menus are French-inspired, there is a dedicated French pastry chef on board, and a bread maker who only uses a special French flour for all the breads and pastries.  
 
Yet the culinary team is also passionate about taking inspiration from the destinations they visit to create menus that are diverse and tie in to the culture and cuisines of the ports of call. Whenever possible, the Ponant chefs shop local markets in port to source fresh fish and produce. Depending on the countries they’re going through, this can be salmon in Norway or beef in Argentina. The chefs also craft menus that feature a wide variety of dishes reflecting the destination of the day. For example: Scandinavian fish soup, Gravlax and Swedish meatballs on its Nordic sailings.
 
“I love working with fresh produce. To complement what we already have on board. I never hesitate to go ashore and scour the markets when we are in port. In Nunavut (Canada), I get my sea trout directly from the local fisherman.” explains Chef Philippe Tremel. 
 
Chef Alain Morville, who has been a chef with PONANT since 1991, shares one of his signature recipes that pairs classic French technique with prized Spanish ingredients for a taste of Ponant that you may enjoy at home, perhaps at a fall dinner party.
 
Scallops with Chickpeas & ‘Bellota’ Chorizo
 
Recipe to serve 6:
 
Ingredients:
 
12 good-sized scallops • 12 slices of bellota chorizo • 1 small tin of chickpeas, rinsed and strained • ¼ of a green pepper, finely diced • 50g of finely chopped onion • 1 garlic clove, minced • 10 cl of white wine • 10 cl of tomato coulis • Crushed flat-leaf parsley • Olive oil • Salt • Pimentón (smoked Spanish paprika)
 
Directions:
  1. Cut and finely dice 6 slices of chorizo
  2. In a casserole, sweat the onion, garlic and chorizo in a little olive oil, then add the green pepper. Cook for 3 minutes, add the chickpeas and white wine and bring to the boil.  Add the tomato coulis, season and simmer for 10 min.
  3. In a non-stick pan, fry the remaining slices of chorizo until brown, place onto absorbent kitchen paper, keeping the chorizo cooking fat in the pan.
  4. In the same pan, brown the scallops.
  5. Finish cooking the chickpeas with the flat-leaf parsley and a good drizzle of olive oil.  Season if necessary.
  6. In each plate, place the scallops and fried chorizo slices over the chickpeas.
  7. Serve with a slice of toasted bread rubbed over with garlic.
