Exclusive Michelin-starred Chef Luigi Taglienti, who reflects the spirit of Palazzo Parigi by creating traditional Italian Christmas dishes with unusual contemporary flavors, has designed and will prepare the special festive menus. The sensorial effect is both surprising and pleasurable, as enjoyed in the iconic Milanese symbol of Christmas, Panettone,which Taglienti reimagined with a creamy texture that may be combined upon request with the coveted white truffle for a tantalizing sweet and salty flavor.
“For Christmas, we have looked to harmoniously play on contrasts, alternating between traditional dishes such as Goose Consommé, fresh Cappellacci pasta with Alpine fondue or stuffed Morozzo capon with creative flavors such as Scallops with thistle and coffee or Scampi with peanuts, perhaps adding grated white truffles,” says Chef Taglienti.
“New Year's Eve offers a fantasy selection of my more creative dishes,” remarks Taglienti. “Imagine bream with gold, ginger and saffron: an homage to my homeland with a Ligurian fish embellished, pun intended, with gold and white saffron, as a nod to Milan.”
Each dining experience is unique, with each menu accompanied by a proposal of stellar wines selected by Sommelier Matteo Ghiringhelli, one of Europe’s top 10 Sommeliers. Special menu items have also been created for the little ones, ensuring the whole family may enjoy the holiday feasts.
