The Ritz-Carlton, Amelia Island Announces Wine Program 2008: Salt Signature Wine Dinners

AMELIA ISLAND, FL (February 21, 2008)Salt, The Grill at The Ritz-Carlton, Amelia Island, is proud to announce its Wine Program 2008 - Salt Signature Wine Dinners. Enticing food and wine enthusiasts from across the nation, the AAA Five Diamond restaurant presided over by Chef de Cuisine Richard Gras is offering a series of four signature dinners, featuring fine wines from both the Old World and the New World.  Throughout the evening, wine specialists share their expertise, allowing guests a fascinating dining experience.  The dinners, served with a seven-course tasting menu carefully designed to complement the featured vintage, are as entertaining as they are exquisite.

Extremely popular since its opening in the fall of 2006, Salt’s concept has multiple levels, referring to its barrier island location between the Atlantic Ocean and the intracoastal salt marshes, as well as to a particular culinary sensibility.  Though it is the most commonplace seasoning, salt is essential to life and to cooking: it changes everything it touches, enhancing flavor and enlivening the sense of taste.  Likewise, the mission at Salt is to  reveal extraordinary tastes in everyday substances.  In addition to the restaurant’s impressive salt portfolio, the celebrated wine list features over 500 select wines.  The knowledgeable servers, all having completed Level 1 Sommelier training, are happy to assist diners in selecting a varietal to complement their meal.

Richard Gras, Chef de Cuisine at Salt, was trained at the prestigious Johnson & Wales University and has held culinary posts at the luxury resort for nearly seven years.  Most recently he served as Sous Chef on Salt’s opening team, a key contributor in the renowned kitchen over which he now presides. 

 

Salt is open Tuesday through Sunday from 6:00 p.m. to 9:30 p.m.  Salt Lounge is open until 11:00 p.m. during the week and until midnight on Friday and Saturday.  For reservations, please call (904) 491-6746.
