At noon, the official Champagne Cascade ceremony begins. With the stroke of an antique Napoleonic saber, a master swordsman will sever the necks of Moet et Chandon champagne bottles.
Once opened, the champagne will be poured into the uppermost glass of the elaborate 6,000-glass pyramid rising nearly two stories in the hotel’s atrium lobby.
Following the ceremony, guests can have complimentary photos taken in front of the cascade, from 12:30-1:30 p.m. and enjoy a slice of birthday cake in honor of

The art of sabering to open a champagne bottle was first practiced by Napoleon Bonaparte’s troops for victory celebrations. Because there are 100 pounds of pressure per square inch in a bottle of champagne, the saber must strike exactly at the neck for proper opening.
