April Wine Dinners 2012
Plume, The Jefferson, Washington, DC

 

Thomas Jefferson may have been the nation’s first foodie – bringing his own cook to Paris to master the European cuisine that he so loved.  He may also have been the first brave soul to attempt viniculture in the New World, on the grounds of Monticello.  How fitting, then, for The Jefferson, Washington, DC to be uniting these two passions in a remarkable series of Wine Dinners in the spectacular Wine Cellar or its acclaimed restaurant, Plume. The multi-course dinners will be created by chef Chris Jakubiec, and each dish will be paired with its ideal vintage, hand picked by advanced sommelier Michael Scaffidi.
 
April 3 – April 7:  Cherry Blossom Centennial Menu – Plume [$195 per person]
During the city’s celebrated annual Cherry Blossom Festival, a Japanese themed menu will be offered in place of Plume’s regular tasting menu.  A Chesapeake Oyster Shooter with Ponzu, Sea Urchin, Quail Egg, and Yuzu Tobiko sets the stage; followed by Chef Chris’Salad of Raw & Cooked Asparagus and Bluefin [or Toro] Tataki, with Sesame Vinaigrette; Maryland Soft Shell Crab Tempura with Old Bay & Piquillo Pepper Purée, Shiso, and Sweet Soy; and his Japanese-inspired preparations of Black Cod; Foie Gras; Waygu Strip Steak; and Cherry “Pasta.”  Finish with a tasting of a rare 1912 Madeira -- the same age as our gift of cherry trees from Japan.
 
April 10 – April 14:  Jefferson’s Journey – Plume [$269 per person]
Happy 269th Birthday, Tom! In honor of the occasion, this special menu available in the dining room with a standard reservation celebrates a few of Jefferson’s favorite things:  French, Italian, and German dishes, each with wine pairings.  Begin with a liquefied version of his preferred vegetable, Chilled Mint-scented English Pea Soup with Lemon Crème Fraîche and English Pea Mousse paired with Bodegas Adega “Essencia Diviana,” 2010 and replace the cake with Jefferson’s Floating Island:Lemon Cream, Snow Egg, and Raspberry Ice Cream paired with Klein Constantia, "Vin de Constance," Constantia, South Africa 2006. As a special birthday treat, a glass of Madeira is a fitting finale, as it was the wine of choice for the signing of the Declaration of Independence and Louisiana Purchase.
  
April 27: Rock Stars of Burgundy and Rhone Valley – Wine Cellar [$225 per person]
Time to pull out the big guns: this is the dinner when Chef Chris gives of his best, course after course of finest cuisine worthy of the grand classics from Vieux Télégraphe to Châteauneuf Du Pâpe to Domaine Aubert & Pamela de Villaine.  In a truly rarified education for your palate, several courses will be presented in a multiple side-by-side tasting format: the entrée of Medallion of Colorado Lamb Loin with Lamb Sweetbreads, Asparagus, and Niçoise Olive Jus, for example, paired with no fewer than three different vintages of Domaine du Vieux Télégraphe, "La Crau," Châteauneuf Du Pape.  The fish course of Bouillabaise of Saffron Broth, Shellfish, Local Rockfish, Mussels, and Fennel is paired with both Domaine du Vieux Télégraphe, Blanc, "La Crau," Châteauneuf Du Pape 2010 and an Aubert & Pamela de Villaine, “Les St. Jacques,” Rully Blanc, 1999.  You’re sure to be star-struck by this soirée in the Wine Cellar.
